1/2 cup butter, softened
1/3 cup brown sugar
1/2 cup white sugar
1 1/8 cup flour
1 egg
1 tsp vanilla extract or bean paste
1/2 cup cocoa (not dutch processed)
1/2 to 1 tsp cayanne (as comfort levels dictate)
2 tsp finely ground coffee
1/2 tsp salt
1/2 tsp baking soda
1 1/4 cups dark chocolate chips

Sift all dry ingredients, cream in butter, egg, vanilla. Stir in
chocolate chips. Roll into 1.5-2" balls and place on greased/floured
or parchment lined cookie sheet. Bake in a preheated oven (375ºF) for
10-12 minutes. Let cool 5-10 minutes before serving.
